1 head of cauliflower
2 cups pickle juice
1 cup flour
3 tablespoons corn starch
1 tsp salt
1 tsp garlic powder
1 tsp onion powder
2 tbsp pickle juice
2 tbsp avocado oil

Directions
- Break cauliflower into bite sized chunks and rinse thoroughly. Put in jar that just fits the cauliflower and pickle juice. Allow to brine overnight.
- When ready, mix flour, corn starch, salt, garlic powder, onion powder, 2 tbsp of pickle juice and avocado oil in a bowl. Break up any large chunks. Next shake off excess pickle juice from the cauliflower and dredge in the flour mixture. Shake off the excess flour.
- Arrange the cauliflower pieces in a single layer in an air fryer. Spray generously with oil spray
- Turn on the airfryer and set the timer for 10 mins at 370 degrees. Flip, spray with oil again, and cook for another 7 minutes. Keep an eye on your cauliflower. Cooking times may vary. You want them crispy, cooked and slightly brown.

- Toast your buns.
- Add your favorite sandwich toppings
- If you want it spicy, use either a sriracha mayo or top your chicken with hot sauce
