Ingredients

  • 1 head of cauliflower

  • 2 cups pickle juice

  • 1 cup flour

  • 3 tablespoons corn starch

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 2 tbsp pickle juice

  • 2 tbsp avocado oil

  • avocado oil spray

Directions

  • Break cauliflower into bite sized chunks and rinse thoroughly. Put in jar that just fits the cauliflower and pickle juice. Allow to brine overnight.
  • When ready, mix flour, corn starch, salt, garlic powder, onion powder, 2 tbsp of pickle juice and avocado oil in a bowl. Break up any large chunks. Next shake off excess pickle juice from the cauliflower and dredge in the flour mixture. Shake off the excess flour.
  • Arrange the cauliflower pieces in a single layer in an air fryer. Spray generously with oil spray
  • Turn on the airfryer and set the timer for 10 mins at 370 degrees. Flip, spray with oil again, and cook for another 7 minutes. Keep an eye on your cauliflower. Cooking times may vary. You want them crispy, cooked and slightly brown.
  • Assembling the chick-un sandwich
  • Toast your buns.
  • Add your favorite sandwich toppings
  • If you want it spicy, use either a sriracha mayo or top your chicken with hot sauce
