kcalCreamy chicken soup is great for cold nights, or days that you need an easy meal with items you probably have on hand. It is very versatile, and canned chicken makes this a super easy week night meal!
Ingredients
1 cup diced onion
2 celery stalks diced
2 carrots diced
2-3 cloves of garlic diced
1 bay leaf
1 tsp fresh thyme
1/2 tsp dried oregano
2 cups of cubed potatoes
2 cups fresh spinach*
4 cups chicken stock
1 can of chicken**
1/2 cup heavy cream
Directions
- Dice onion, celery, carrot, garlic, and potato.
- Add 1 tbsp cooking fat of your choice to a large soup pot. Add diced veg, bay leaf, thyme, oregano, and 1 tsp of salt and cook over medium heat until onions are translucent.
- Add chicken stock, allow to simmer until the potatoes are cooked through. About 20 minutes.
- Turn the heat off. Add in canned chicken, heavy cream and spinach. Stir to combine and wilt the spinach.
- Ladle into bowls and enjoy!
Notes
- *Any greens can be used for this soup. We use kale, spinach, chard, whatever we have on hand!
- **I’ve used canned chicken in this recipe for ease, however, rotisserie chicken works great too! You can use any cooked chicken you have on hand.
