Ingredients

  • Rolls

  • Mayo

  • Marinated Tofu
  • Tofu block

  • 2 Tbsp White Miso

  • 1 tsp fresh grated ginger

  • 2 tbsp White Wine Vinegar

  • 1/4 cup Tamari or soy sauce

  • 1 tbsp Maple syrup

  • 2 cloves of grated garlic

  • Pickled Veg
  • 1 large carrot grated

  • 1 daikon radish grated

  • 1 cup of water

  • 1 cup of white vinegar

  • 1 tbsp maple syrup

  • 1 tbsp salt

  • 2 jalapeños sliced in rounds

  • 1 English cucumber

  • 1/4 cup of chopped cilantro

Directions

  • Marinated tofu
  • Slice the block tofu in half and then into squares roughly 1/4 inch thick
  • In a large pot, add the tofu and cover with water. Add 1 tbsp of salt and bring to a boil. Boil the tofu in salted water for 15 minutes.
  • While the tofu is boiling, add the miso, ginger, vinegar, tamari, maple syrup and garlic in a bowl. Whisk to combine.
  • When the tofu is done, remove from the water and allow to drain on a plate lined with paper towels. Gently press out excess water being careful not to disrupt the shape.
  • Place the tofu in a shallow bowl and put the marinade on top and all around the tofu. Allow to marinate 10 mins while prepping the rest of the sandwich ingredients.
  • Veg
  • In a saucepan, add the water, vinegar, maple syrup and salt and bring to a boil. Grate the carrots and daikon radish. To a glass jar, add the carrots and daikon radish. Carefully pour the quick pickling mixture into the jar, reserving half a cup for the jalapeños. Allow to cool and set aside.
  • Slice jalapeños and in a small bowl, add the jalapeños and the reserved 1/2 cup of the pickling liquid to cover the jalapeños. Allow to cool and set aside.
  • Cut the cucumber into thin rounds and set aside.
  • Chop the cilantro and set aside
  • Marinated tofu
  • In a skillet on medium high heat, add a tablespoon of cooking oil. Sauté the tofu about 2 minutes per side until slightly golden and warmed through. Do not let it burn.
  • Assembly
  • Slice your rolls open and cover both sides with mayo. Place on a sheet pan and broil on high for 2 minutes or until slightly golden. Keep an eye on them as ovens vary.
  • Place the tofu inside the sandwich, add pickled vegetables, cucumber, cilantro, and pickled jalapeños.
